Our Story

 

Our friendship, love for our family, our friends, our community, and Christ have inspired this great vision for The City of Sugar Hill.

The owners Jay and Keri Liebrock started Sugar Hill Distillery in 2016. We have been Sugar Hill residents since 2013. Jay started his hobby of beekeeping in 2014. We wanted to use the delicious honey to make mead and shine. Jay applied for a Federal experimental license and got denied and was told there were enough of those in the market already. That’s when the business plan began…. Years later we bought the old Sugar Hill Community Center in the downtown “Shine District” as the home for the Distillery, Brewery, and full-service restaurant. SHD is the first in the nation to manufacture in the same premise and using the same equipment to distill and brew!
Jay or “JD” to most, is a retired Director of Intelligence in the U.S. Army and an entrepreneur of many ideas. After retiring he wanted to create a legacy for their kids and grandkids to enjoy. He is taking his spirit making skills to a whole new level. He is excited to use his knowledge from the ol’ days in Afghanistan and what he learned after graduating from the esteemed Moonshine University to create delicious spirits.

Keri spent most of her career in the restaurant industry. She has a creative passion for food and pairing spirits and beers. She has teamed up with the talented Morgan Pollard as her Executive Chef (and he’s an amazing brewer, too). He trained under one of the best, Chef Reinhold Weger.

Tracy Seymour, one of Keri’s best friends, will be providing the gluten-free menu options. Her son was diagnosed with Celiac disease as a young child. Tracy has perfected cooking and baking without gluten!

Keri and Tracy have a cheese curd dispute. Keri prefers Wisconsin cheese curd (GO PACK GO!) and Tracy (who hails from Canada) prefers curd from back home. Either way- cheese is delicious and we will feature both cheeses in the menu- so you decide!

SHD’s Wunderbar Bierhaus features the home-brewing expertise from Morgan and brewer Matt Seymour (Tracy’s hubby). Both have been perfecting their Lagers, Pilsners, Doppel, Hefeweizens, Weissbier, and Dunkel from home. Now they get to do it in big batches! Our beers will be more German styled to complement our food menu.
